I am pleased to find out that Chef Editha Singian is back at Pino, a local Cebu restaurant that specializes in Spanish and Filipino heritage dishes. Known for her delectable desserts and foolproof recipes, Chef Editha also serves as a recipe development consultant of various restaurants in the Philippines.
I had the rare pleasure of meeting the talented chef during a jam-packed dinner at Pino last March. At that time, the restaurant was filled with happy graduates and with their even happier parents.
But even if there is no special occasion, I think that Pino will still be full. You see, ever since they opened in 2007, this restaurant has been known for their delicious and very affordable buffets. It is for these very reasons why Pino was recently hailed by a local daily as the 'Best Budget Lunch Buffet' in the city.
That evening was made extra special with both Chef Editha and Chef Myke Sathou or more affectionately known as "Chef Tatung," overseeing the Pino kitchen. Their presence somehow gave an additional excitement to the beloved Cebuano restaurant. Pino, I've been told, has been partnering with various local chefs, albeit in a limited engagement, in curating recipes for their daily buffets and even re-imagining a few dishes along the way.For example, Chef Tatung came up with Dakdakan, Gising-gising with chicharon, Lumpiang Paklay and the interesting squid ink infused Pansit Cavite.![Pino Restaurant]() |

Chef Editha on the other hand, took care of the desserts. The multi-layer goodness she named 'Patong-Patong' was very memorable and ingenious at the same time. It's made with alternating slices of biko, ube halaya, leche flan and then topped with candied nuts.I am not sure if the 'Patong-Patong' will still be part of Chef Edith's desserts in her return at Pino.
